I love the sight of colored peppers. They come in hues of red, yellow, green and orange. I managed to get hold of ripe and bright red, yellow and green bell peppers.
I was to send a bunch of youngsters of different age groups an appetizer that would appeal to all of them. I always challenge myself to make starters that are bite sized. And this idea of bell pepper squares dawned on me and I thought that this could potentially be a hit amongst everyone. Well what’s not to like when it has ingredients like cheese and peppers and sundried tomatoes and walnuts.
These squares are bite sized, baked and hardly has any oil. Throw in some sundried tomatoes for a sophisticated feel and some roasted walnuts and tell yourself that you are, after all, eating healthy!
