Bruschetta is an antipasto from Italy. Usually a bruschetta is prepared by grilling thick slices of bread which are rubbed with garlic and drizzled with olive oil and often topped with tomatoes and herbs.
This is a variation on the traditional bruschetta but tastes no less different. This is one of the few times when tested and tried recipes and combinations have been altered and have worked successfully.
I wanted to do something extra to it but also did not want to take away the taste of this eternal classic from Italy. Cottage cheese is a huge favourite amongst many. I decided to toss some cubes of cottage cheese with the tomatoes and herbs and what resulted was a lip smacking appetizer!
