With the heat and humidity of summer one wants to eat fresh, wholesome meals that are not heavy on the tummy. Conceiving and making such a dish need not always be a daunting task. It’s all about coming up with the right combinations and they could very well go on to become your staple and your favorite too. It makes sense to invest in an oven, not necessarily an expensive one at that. But people with no oven need not despair as you can dabble with a lot of paraphernalia in the kitchen.

Mushrooms and cottage cheese are such a scrumptious combination. They have a lot of things going for them. They are rich in protein. This dish is gluten free and can very well constitute your whole meal for either lunch or dinner. This is an apt option for the paleo and keto diets which a lot of people have adopted. And what’s more it’s vegetarian and there’s no scare of eating too much meat as there’s always a thought of meat being detrimental to your health. And most important of all, it’s absolutely delicious.

Toss the mushrooms in some fresh olive oil with some herbs and seasonings and bake it in the oven until they are cooked but still have a bite to it. Marinate the cottage cheese and put them on an iron skillet and turn them around until they turn color on both sides but ensuring that they still have a melt in the mouth texture. Transfer them to a platter and garnish them with a sprinkle of spring onions and you are all set to serve.
