The Sharon fruit is the trade name of a variety of Persimmons grown in Israel. It is shaped like a tomato with a thin orange skin, a green stalk and orange flesh. It also resembles a mini pumpkin.
Many a times even though we would like to do our own vegetable and fruit shopping and always be there to pick the most unusual varieties of fruits and vegetables, due to our busy lives we are unable to do so. I am very fortunate to be blessed with a dear family who never misses an opportunity to send me amazing and novel fruits. And that is how these Persimmons landed at my door step.
I love concocting desserts where the fruit is glorified and not encased in any dough. I wanted to highlight the persimmon which was most definitely going to be the star of the dish.
Honey, vanilla and almonds I thought will be an ideal combination with the persimmon. I decided to bake the persimmon with some vanilla infused honey. A luscious scoop of vanilla ice cream was served over the baked persimmons and it was topped with some roasted almonds and a drizzle of honey. It was a fulfilling dessert which did justice to the succulent fruit!!
